The rancio wine is a type of old wine high alcohol obtained from a very characteristic process of aging. The process consists of an oxidation technique of the grape, exposing the wine to the sun in large glass carboys. This type of wine is typical of Alicante, the Montsant and Allela, even between different areas there are small nuances in their preparation.
