The pomace is a typical Spanish drink, it is a type of brandy that due to its characteristics and production processes is treated in a special way and not like any other liquor. For its elaboration the grape pomace is used, all those parts of it are discarded in the elaboration of the wine, unlike brandy, the pomace is distilled in the presence of these wastes and not only the must, so we can say that the pomace is the result of distilling wine with pomace or solid waste and not just distilling wine. In Spain, the marcs with the longest tradition are those that are traditionally made in Galicia, the Basque Country and in the town of Liébana in Cantabria.
