The Orujo de Galicia is the one with the longest tradition. Obtained by distilling the fully fermented pomace from the harvest. Before distillation, however, the pomace is kept in stagnant containers, where no air pockets or oxygen can appear and always for less than 5 months, since its quality may be affected.
